Pumpkin pie:
This pumpkin pie recipe is gluten free, dairy free and low carb. Start by adding ¼ cup of coconut oil to a mixing bowl. Then add one egg and mix it up. Now add 3 cups almond flower, a low carb sweetener, a pinch of sea salt and again mix thoroughly to form the dough. Now go ahead and form the pie crust by pressing the dough into the pie dish. Before baking the piecrust take one egg yolk whisk it up a little bit and coat the inside of the pie crust with the egg yolk. Bake the crust at about 350 degrees Fahrenheit for about 15-20 minutes. To make the pumpkin pie filling mix 2 eggs in a bowl along with a can of organic pumpkin puree, some full fat coconut milk, granulated low carb sweetener, pumpkin pie spice, organic vanilla extract, and pinch of sea salt. Once the crust is done, pour the filling into the pie crust. Lower the temperature of the oven to 325 degrees Fahrenheit and bake the pie for another 35 to 40 minutes until your pumpkin pie is done. Let the pie cool for about an hour before serving.
Black Bean and Sweet Potato Chilli:
Chop up one large onion and one poblano pepper and fry in pan until the chopped pieces are soft and the onion begins to appear translucent. Add little bit of water, garlic powder, steamed and sliced sweet potatoes, three cans of black beans, two cans of diced roasted tomatoes, a bit of salt, and stir well until fully cooked. Take some fresh basil leaves chop them up and add to the mix and your Chilli is ready. This healthy vegan Chili recipe goes very nicely with cornbread.
Grain-free cornbread:
Mix two cups of almond flour, 3 tablespoons of coconut flour, half teaspoon of baking powder, half teaspoon of baking soda, and half teaspoon of sea salt in a bowl and set aside. For the wet ingredients use 4 eggs, one third cup of unsweetened almond milk, 1 teaspoon of raw apple cider vinegar, 3 tablespoons of raw honey, and one fourth cup of melted coconut oil. Mix these ingredients until fully combined. Add the wet ingredients to the bowl of dry ingredients and mix once again. Grease your pan with coconut oil. Pour the mixture into the pan and spread out evenly. Bake at 350 degrees Fahrenheit for 30 minutes. Let it cool for 15 to 20 minutes so it’s easier to remove from the pan.
